2.5 tablespoon oil
500 grams bhindi okra
1 teaspoon cumin seeds
1 medium red onion chopped
1 inch ginger chopped
1 green chili chopped, or more to taste
2 medium tomatoes chopped
1.5 teaspoon coriander powder
1/2 teaspoon turmeric powder
1 teaspoon amchur dried mango powder 1/4 teaspoon red chili powder
3/4 teaspoon salt
Garam Masala

Instructions :

Deep fry bhindi in oil and make sure all the excess water is absorbed and bhindi is cooked yet not slimy.

Heat oil in a pan.
Add cumin seeds and let them crackle for a few seconds. Add ginger, onion, and fry until they turn slightly brown.

Now, add turmeric powder and salt. Cook for few more minutes.

Add diced onion, red chili powder, onion-tomato masala, garam masala, and cook until oil starts to separate from the sides of the pan

Now, add little water if the masala is too dry.

Add tomato puree, diced tomato, and chopped coriander. Give it a mix. Add the fried bhindi and cook for 3-4 minutes on medium heat.

Now add tandoori masala and garnish with fresh coriander.

Serve hot with paratha or roti.

  • Look for soft and tender bhindis
  • Wash and dry it well
  • Soak it in vinegar for an hour before preparing it.
  • Dry well again.
  • Add a souring agent such as lime juice or amchur.
  • Add salt in the end
